Parmesan Zucchini

This simple, flavorful dish is a delicious accompaniment to roast chicken or grilled fish. And for vegetarians, it's yummy enough to eat alone as a main course.

2 medium zucchini, sliced diagonally about 1/4" thick
1 medium onion, sliced thinly
2 tbsp. olive oil
salt and freshly ground pepper
3 tbsp. freshly grated Parmesan cheese

Preheat oven to 375 degrees. Layer the zucchini and onion slices in a 9" x 13" glass or ceramic baking dish. Pour approximately 2 tbsp. water over the zucchini, drizzle the olive oil over the vegetables and season lightly with salt and pepper. Sprinkle the Parmesan cheese on top. Bake on the top shelf of the oven for 25 to 30 minutes, until the zucchini is tender and the top is browned. Serve hot or at room temperature.
