Spicy Chicken Saute

tbsp. chili powder |

tsp. ground cumin |

tsp. cayenne pepper |

boneless, skinless chicken breasts |

tsp. olive oil |
| 1/2 |
cup chicken broth |
| 1 |
tbsp. vinegar |
| 8 |
oz. canned tomatoes, diced |
| 4 |
oz. mild or hot green chili peppers, diced |
| 1 |
lime, cut into wedges |
Mix the three dry ingredients together. Rub 1 tablespoon of the spice mixture onto the chicken. In a skillet, warm the oil and add the chicken. Saute for 2 to 3 minutes per side. Transfer the chicken to a plate. Add the broth, vinegar and the remaining spice mixture to the skillet and bring to a boil. Boil for 1 to 2 minutes. Return chicken to the skillet. Add the tomatoes, corn and chilies and bring to a simmer. Continue simmering for about 5 minutes, or until the chicken is cooked through. Serve with lime wedges.
