
Dianas Fluffy Mashed Potatoes

medium potatoes, peeled and boiled

| ounces fat-free cream cheese

| cup low-fat sour cream |
| | salt, pepper, garlic powder

Tbsp. chives, chopped

Beat sour cream and cream cheese until well blended. Add one hot potato at a time. Beat until light and fluffy. If the mixture is too thick, add skim milk, two tablespoons at a time until the desired consistency is reached. Season to taste with salt, pepper and garlic powder; add chives. Put mixture into a baking dish and top with butter and Paprika.
