Spicy Low-Fat Dip
Happy Holidays!
Advocate Health Care wishes you a Happy New Year and good health throughout 1997. Start the New Year out right and give your celebration a kick with this spicy low-fat dip.

15-ounce cans black beans, undrained

| jalapeno peppers, chopped (for less heat, remove seeds)

| cloves garlic, chopped
|

| cup unpeeled tomatoes, seeded and chopped

| 1/4

cup red onion, chopped

tbsp. fresh cilantro, minced

juice of one lime

| | salt and pepper to taste
|
|
Drain beans, reserving 1/4 cup of the liquid. Add beans, reserved juice, jalapenos, garlic, salt and pepper to food processor bowl or blender. Process until smooth. Spoon into a serving bowl.
Combine tomato, red onion, cilantro and lime juice; stir well and spoon over bean mixture. Serve with baked tortilla or pita chips. Makes three cups.
