
Hearty and Healthy Chicken Fajitas

Serves 4 (2 per person)

1 lb. boneless, skinless chicken breast
(cut into 1-inch strips)
3 Tbsp. lime juice
1/2 tsp. chili powder
1/2 tsp. ground coriander
1 onion, quartered
1 green pepper, sliced into strips
8 flour tortillas (6")
Salsa, chunky

Combine lime juice, chili powder and coriander and pour over chicken breast. Refrigerate for 30 minutes. Add vegetables to chicken and toss well. Coat a pan with non-stick cooking spray. Add chicken and vegetables and stir-fry until done. Warm tortillas in microwave for 20 seconds. Fill with chicken mixture. Serve warm with salsa.
