
Garlic Mashed Potatoes
These simple potatoes are healthy and packed with flavor. For a change of taste this summer, try them with grilled meats or fish.

6 large peeled Yukon Gold or Idaho potatoes (approximately six cups)
10 garlic cloves
1 bay leaf
1 tsp. salt
1/4 cup to 1 cup buttermilk
salt and pepper to taste

In a large pot, combine the potatoes, garlic cloves, bay leaf and salt with just enough water to cover. Cover the pot, bring to a boil, then lower the heat and simmer for 15 to 20 minutes, or until the potatoes are tender. Drain. Discard the bay leaf. Using a potato masher, mash the potatoes and garlic with enough buttermilk to achieve a smooth consistency. Add salt and pepper to taste.
