Good-for-You Grilling
The Fourth of July and grilling go hand-in-hand, but how do we maintain low-fat eating habits while still enjoying a tasty barbecue? Try these helpful hints from Advocate:
- White-meat chicken and turkey (skinless), fish and lean sirloin and tenderloin are low-fat grilling options. Don't forget to trim all excess fat.
- Try kabobs instead of burgers. Alternate lean beef, chicken or shrimp with tomatoes, onions, peppers, etc. and baste with a fat-free dressing for extra flavor. Pineapple chunks and apple slices also are great on a kabob.
- Fresh vegetables are delicious and full of flavor when grilled. Potatoes, corn on the cob, zucchini and squash can all be wrapped in foil and grilled. But go easy on the margarine or butter. Another tasty vegetable option: Place pieces of red and green pepper, onions and fresh mushrooms on skewers, sprinkle with balsamic vinegar, salt and pepper to tasteand grill.
- Fresh fruit with frozen yogurt is an easy low-fat dessert with lots of vitamins and fiber. Watermelon, cantaloupe, peaches, nectarines, cherries and berries are all good summer options.
